Christmas 2016 was really very different in more ways than one: we celebrated it on Christmas Eve at Hutson Cay with a fabulous dinner of lobster, conch and octopus, as well as the more traditional mincemeat shortbread and brandy butter; it was an international evening in three languages and we sang carols (in two languages), danced and exchanged presents, all with much laughter and great merriment. Harmonie (French) hosted the evening on their 48 ft catamaran, all the fish was courtesy of Telefine (Austrian), Makani (Swiss) produced salads and caramel delicacies and Ocean Rainbow provided the British - and very popular -mincemeat/brandy butter combination, as well as conch curry, roasted vegetables and Christmas cake. It was a gastronomic feast and a great way to celebrate Christmas. Although rather belated, thanks to Belize telecommunications, we wish everyone a very Happy Christmas and fantastic New Year for 2017. We have finally made it to Cay Caulker!
